EPISODE 1

Chicken & Pasta Bake

Ingredients

Chicken breasts
Penne Pasta 
Tomato Purée 
Cheese
Bell Peppers
Mushrooms 
Red Onions

Step 1

Chop up your vegetables and chicken into cubes. Then heat up the oil and lightly fry onions. Boil your pasta. 

Step 2

Season the chicken and fry in a frying pan till cooked. 

Step 3

In a baking dish, add your pasta, stir in your chicken and veggies and add tomato purée. Stir everything together.  Add the cheese on top. Bake at 220C/200C fan/gas 7 for 20 minutes or until cooked to golden brown.

EPISODE 2

Biscetti Bolognese

Ingredients

Minced Beef
Spaghetti 
Tomato Purée 
Tinned tomatoes
Parmesan Cheese
Basil
Garlic 
Onions

Step 1

Heat a saucepan over a medium heat with a tablespoon of oil and add the onion and garlic. Cook without colouring for a few minutes, then add the beef mince and season with salt and pepper and any other seasoning you want.

Step 2

Cook the beef until browned all over, then add in vegetables, you can use any vegetables you have, cook vegetables until drowned, then stir in the tomato purée followed by the tinned tomatoes. Bring to a boil then let simmer for around 30 minutesadd a splash of water if it is looking a bit dry

Step 3

Meanwhile, bring a large pan of seasoned water to the boil and add the pasta. Stir to stop the pasta from sticking and cook for 7–10 minutes.

Step 4 

To check the pasta is cooked, taste a strand – if the center is still hard give it a couple more minutes. When it is fully cooked, drain in a colander and drizzle with a little olive oil to prevent the spaghetti from sticking together.

Step 5

Chop the basil and stir through the Bolognese sauce. Divide the spaghetti between 4 plates and spoon the Bolognese on top. Finish with grated Parmesan cheese and chopped basil.

Lamb Chops

Ingredients

Thyme
Minced garlic
Mint seasoning
Lamb Chops
Potatoes
Asparagus
All purpose seasoning

Step 1

Preparing the Lamb Chops:

  1. In a bowl, mix all purpose seasoning, thyme, minced garlic, salt, and pepper and mint seasoning.
  2. Rub the spice mixture all over the lamb chops, covering them evenly.
  3. Let the lamb chops marinate for at least 30 minutes, allowing the flavors to infuse.
Step 2

Grilling the Lamb Chops:

  1. Preheat your oven to medium-high heat.
  2. Oven the lamb chops for about 3-4 minutes per side for medium-rare, adjusting for your preferred level of doneness.
  3. Remove the chops from the oven and let them rest for a few minutes.
Step 3

Preparing the Garlic Mashed Potatoes:

  1. Boil the peeled and diced potatoes in a pot of salted water until tender (usually 15-20 minutes).
  2. While the potatoes are boiling, cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast in a 400°F (200°C) oven for about 30 minutes until soft.
  3. Drain the potatoes and mash them with roasted garlic cloves, butter, and cream until smooth.
  4. Season the mashed potatoes with salt and pepper to taste.
Step 4

Roasting the Asparagus:

  1. Preheat your oven to 400°F (200°C).
  2. Trim the woody ends off the asparagus spears.
  3. Toss the asparagus in olive oil, season with salt and pepper, and spread them on a baking sheet.
  4. Roast in the oven for about 10-15 minutes until tender-crisp and slightly caramelized.
Step 5

Plating:

  1. On each plate, place a generous scoop of garlic mashed potatoes as your base.
  2. Arrange the grilled lamb chops on top of the potatoes.
  3. Add a serving of roasted asparagus on the side.
  4. Optionally, drizzle with pan sauce made from lamb juices, wine, and herbs.

Mac ‘n’ Cheese
 & Chicken Wings

Ingredients

Garlic 
Seasonings 
Mix Herbs 
Salt and Pepper 
Spicy Ketchup
2 Blocks of Cheese
Butter 
Flour
1 White Onion 
Milk 
Macaroni 
Salt and Pepper 
Honey

Step 1

Mac ‘n’ Cheese:

  1. Boil the pasta according to the instructions of the pack. 
  2. Make a roux by melting the butter in a saucepan over medium heat. Add flour, salt, and pepper and stir until smooth. Slowly pour in milk and stir until the mixture is smooth.
  3. Grate the cheese and then add it to the roux and combine it.
  4. In a baking dish, place the pasta after draining. Add the roux and top with more grated cheese to bake. 
  5. Place in the oven and bake at 220ºC till golden.  
Step 2

Chicken Wings:

  1. Preheat your oven to medium-high heat.
  2. Make a marinade of spicy ketchup, honey and salt and vegetable oil. Marinade chicken wings for about an hour. 
  3. Bake the wings for about 45 minutes or till cooked through.

 Biscetti Meatballs
Ingredients

Garlic 
Onion
Mince
Seasoning
Egg
Flour
Mushrooms
Bell Peppers
Oil
Tomatoes
Cumin
Tomato Purée
Spaghetti

Step 1

Preparing the Meatballs:

  1. Finely chop up your onion and garlic.
  2. Place mincemeat into a large mixing bowl with 
    the chopped onion and garlic and your seasoning of choice.
  3. In a small bowl, lightly whisk a egg with a fork, then add to the mince and mix very well.
  4. Divide the mixture evenly into 8 balls.
  5. Sprinkle the flour onto a plate, then roll each meatball in the flour.
  6. Chill for 10 minutes.
Step 2

Preparing the Veg:

  1. Chopped up mushrooms and bell peppers,
  2. Put 1 tbsp of oil into a pan, add your chopped vegetables and cook for about 5 minutes until soft.
  3. Remove from the heat and set aside to cool.
Step 3

Cooking the Spaghetti:

  1. Put water into a pan and add some olive oil and salt

  2. Add your Spaghetti and leave it to boil.

Step 4

Making the Sauce:

  1. Heat the remaining oil in a frying pan.

  2. Add the meatballs and cook for 5 minutes without moving them.

  3. Using tongs, carefully turn them over and cook for another 5 minutes.

  4. Mix the tomatoes, cumin and tomato purée together,
    then add to the pan.

  5. Cover and cook gently for 25 minutes until the meatballs are cooked.

Step 5

Plating:

  1. In each bowl, add a generous portion of pasta.
  2. Top with the meatball sauce.
  3. Optionally, finish with seasoning or cheese of your choice.
